The only thing better than coming home and not having to make dinner is being able to grab a few things from the fridge and turn them into something delicious with a minimum of fuss.
Monday was my first day back at work after the holidays and as soon as I walked through the door and was greeted with – what’s for dinner? – I was reminded of why I need to get a meal plan in place asap.
Fortunately, with a little help from one of my favourite food bloggers – Gaby Dalkin from What’s Gaby Cooking I was saved from the “what’s for dinner” dilemma.
A quick check of available ingredients confirmed I could try her Brie, Bacon and Basil pasta recipe.
Not that I could eat them (due to my temporary reflux dietary restrictions), but I decided to add some sweet Solanato tomatoes to my dish and once it hit the table it was clean plates in short order.
A rare dinner time win in this household of fussy eaters is something to celebrate indeed.
